WIAW: Traveling West

Yesterday I left snow filled Washington, DC for a business meeting in Lincoln, NE.  It was actually a little funny leaving such a wintry mess for the 67 degree temperatures forecasted for today here in Nebraska, but I’ll take it! Before leaving for the airport I enjoyed a big breakfast at home (which I totally forgot to take a picture of).  I scrambled two eggs and then topped them with a little cheddar cheese.  Alongside the eggs I had two pieces of Ezekiel bread toasted.

As my first flight was over the lunch hour, I decided to bring a few snacks from home.  I threw raspberries, a banana, a pear, and a mini babybel cheese round in my backpack.

Once in the airport I bought a big bottle of water and hopped on my plane.  During my first flight I had the Babybel, pear, and 1/2 of the raspberries.

During my layover in Minneapolis I grabbed just a sandwich from Chick-fil-a and then ate the other half of my raspberries.

Last night for dinner I had a business meeting at Misty’s Steakhouse in Lincoln.  After a few chips and dip from an appetizer, I started off dinner with a cup of french onion soup, which was awesome.

For my entree I ordered a salad topped with blackened salmon, which was also very good.

Looking back, I wish I had picked something else for lunch at the airport but I’ll admit that it was a rushed and hangry decision.  Otherwise, I’m glad I had a big breakfast, brought snacks from home, and ordered a big salad for dinner.   My goal today is to start the day with a workout, to have a healthy and filling breakfast, and then to choose wisely when I have dinner at the airport tonight.

Today’s post is also featured on WIAW.  Go check out what everyone else is eating!
