I love going on vacation, even if it’s a short one, but I also enjoy getting back to the grind. Whether it’s sleeping in my own bed, eating foods from home, or tackling my to do list, I usually enjoy getting back on track after a few carefree days. Monday was my first day back at work after a long weekend in Canada, so my goal was to get back to my “back on track pregnancy diet“. Here are my eats…
Breakfast @ 6:45AM – 1 Thomas bagel thin and two eggs
Coffee break @ 9:30AM – 1 grande iced skim decaf caramel macchiato
Lunch @ 11:30AM – Romaine lettuce, diced strawberries, 1 chicken breast, 1/4 cup cheese, and Ken’s strawberry vinaigrette
Snack @ 3:30PM – 1 diced apple, 1 packed of plain oatmeal, and 2 tbsp peanut butter
Dinner @ 6:30PM – 1 Brat Hans Chicken Burger on a potato bun with a side of pineapple and 1/2 a pickle
Looking back, I wish I had added a few more veggies to my day. I could have added a slice of tomato to my breakfast sandwich and lettuce/spinach to my chicken burger. I always forget all the easy ways to incorporate more veggies into my day, so it’s something I want to work on! We’ll see next WIAW!
