I can’t even tell y’all how excited I am for the long weekend. The fact that it’s Saturday and I still have two full days off just makes me happy! Friday, after work, a doctors appointment for me, and a vet appointment for Theodore, Neal and I kicked off the long weekend with an amazing dinner!
After finding a bundle of kale in our CSA this week, I found this amazing recipe for Kale and Onion Calzones and knew it’d be a great way to use the ingredient. Neal is not a big fan of mushrooms, so I did not include them in this dish. Otherwise I followed the recipe exactly.
Neal loved this dinner, which is huge because I didn’t know if he’d be willing to try out Kale.
This morning I woke up at 6:30AM, took Theodore for a walk, and then headed over to the gym for an 8AM spin class.
I love spin (though I really don’t like either of the instructors at this gym) and got a really good workout in! After spin I made myself a smoothie. I combined frozen tropical fruit, strawberry kefir, tropical Zico coconut water, ice, and a banana. It was a super tasty smoothie and the perfect fuel post spin. I also enjoyed 2 pieces of Ezekiel bread topped with peanut butter.
At 9:30AM I headed out the door and drove to Virginia for football practice. We have a bye this week, which gave me a change to get some great conditioning and practice in. After a long warmup we did a Tabata workout, doing an exercise for 20 seconds and then rested for 10 seconds before starting the next exercise. There were 10 stations total and we did the circuit twice. After conditioning I put on all of my football pads and worked out with one of my team mates.
The rest of the day was spent resting, running errands, and organizing! For dinner I used the Bok Choy from our CSA box to make this amazing Bok Choy and Ground Chicken Stir Fry.
I served the stir fry over brown rice and have got to tell you, this dinner is amazing! I highly recommend this recipe (note: I used ground turkey instead of chicken)! I am two for two with CSA inspired dinners this week and love that Neal is enjoying eating all these veggies! I’m excited to see what we get in our CSA box next week!
All in all it has been a really great kick off to the long weekend! We’ve got some friends coming over tomorrow (Mexican lasagna, queso, and strawberry rhubarb crumble on the menu) and plan on enjoying some time in the sun!
